The Low Carb Breakfast You’ll Love


This week's truth bomb: I don't love low carb diets.

Can I get a show of hands of everyone who has tried or seriously considered going on a low carb diet?

Yeah, I thought so. My hand is up, too.   

What I've learned is this: doing the low carb diet can lead to a fit of deprivation, which results to devouring half a box of Wheat Thins because you can’t stand the thought of another turkey and cheese roll up. Oh, wait… that might just be me…

Truthfully, we may lose a few pounds on a low carb diet, but 9 times out of 10, we eventually rebel against the no bread mentality and go face first in the bread bowl at the local steak house.  

I might not be a believer of a low carb diet, but I’m a lover of this low carb breakfast.

Although I’m not a believer, I think that being conscious of what goes into your body is important. Using your food for fuel is my motto. And sometimes, I do opt for a low carb breakfast to start my day.

My favorite breakfast salad—yes, I did use breakfast and salad in the same sentence—is one you will love. Plus it's unintentionally low carb.

Robin’s Low Carb Breakfast Salad

  • 1/4 cup maple syrup
  • 1/4 cup olive oil
  • 1 tbs apple cider vinegar
  • 2 tsp Dijon mustard
  • salt
  • pepper
  • 2 cups of your favorite greens
  • toasted pecans
  • your favorite cheese
  • sliced onion
  • sliced avocado
  • 1 poached egg

The Maple/Vinaigrette

In a bowl or a mason jar, combine maple syrup, olive oil, apple cider vinegar, Dijon mustard, salt and pepper to taste. Whisk it in your bowl or put a lid on your mason jar and shake it. You can store the leftover vinaigrette in your refrigerator for at least two weeks.

The Salad

Place your greens on your breakfast plate. Sprinkle the greens with toasted pecans, your favorite cheese (smoked blue cheese is delicious!), sliced onion and sliced avocado.

Place a poached egg in the center and pour the maple vinaigrette on to taste.

Voila! You have my favorite breakfast salad.
